Kachori the way Ratlam makes it: a thin, crisp shell stuffed with a yellow-lentil-and-spice filling, deep-fried until the outside snaps cleanly and the inside stays just slightly soft.
Warm them briefly before eating. Serve with tamarind chutney or, the Ratlami way, a simple sprinkle of black salt.
